Copha, the happy vegetable shortening.

Copha is actually solidified fat made from coconut oil made by Peerless Foods in Australia. I've never used it in cooking before but all I know is that its party-happy packaging caught my eye as it sat amongst rows of butter (and other solid fat things that I shouldn't even be looking at!) in the supermarket.
